The other night I was at a loss for what to make for dinner. I didn’t know what I felt like but knew I wasn’t up for the same old same old. So I looked through the fridge and saw eggs, milk and cheese. Then it hit me a crust-less quiche!
My husband and I used to make them quite often when we lived in Australia. I only have a picture before it went in the oven … sadly no final product. Yes, it went that quickly … it was that good.
So if you’re looking for a quick and tasty dinner idea tonight give this a shot:

Crust-less Quiche
5 pieces of prosciutto chopped
2 leeks washed and chopped
1 pkg of frozen spinach (thawed and drained)
1 cup swiss cheese grated
8 eggs
1 cup milk
salt and pepper to taste
1. Preheat oven to 350F. Spray the inside of a quiche dish (or a 9 x 9 baking dish if you’re like me and in need of a quick dish) with non-stick cooking spray.
2. Wash and chop leeks. Sautee in a frying pan with bit of olive oil until soft and slightly brown. Set aside.
3. In the same pan sautee thawed spinach for a couple of minutes to get rid of any excess water.
4. Beat eggs with a fork in a mixing bowl and add in the milk, salt and pepper.
5. Spread shredded swiss cheese over the bottom of the dish then spread the spinach, leeks and prosciutto over the top.
6. Finally pour the egg and milk mixture over the top and bake in the oven for about 30 mins or until the middle of the quiche is cooked (not runny).
Serve with croissants, a green salad or some toast. Yumm! Enjoy!

I feel like such an idiot! I love quiche and was craving some the other day only I am not really doing the wheat thing. I was wondering what I should use for a crust instead. I gave up and fixed something else. Duh…NO CRUST…how hard is that! Thanks so much…quiche here I come!

Leslie, that’s pretty funny! I thought it was a little different at first to make it without a crust as my husband is ALL about the crust, but this tastes so good and is easy to remove from the pan if you spray it well enough. I hope it turns out for you!
